Crispy sweet potato fries loaded with masala chicken, melted cheese and fresh toppings, finished with MAGGI® Hot & Sweet Sauce, take this dish to another level!

Ingredients
For the masala chicken
• 20ml vegetable oil
• 100g masala curry paste
• 1.2kg chicken breasts
For the loaded fries
• 1.2kg sweet potato fries
• 100g grated cheddar cheese
• 150g red onion, thinly sliced
• 250g cucumber, diced
• 500g lettuce, shredded
• 50g pomegranate seeds
• 100ml sweet yogurt
• 150ml MAGGI® Hot & Sweet Sauce
• 20g green chilli, thinly sliced
• 10g fresh coriander, roughly chopped
Method
  1. In a large bowl, mix together the vegetable oil and masala curry paste until smooth. Add the chicken breasts and coat evenly with the marinade. Cover and refrigerate for at least 2 hours, or overnight for maximum flavour.
  2. Roast the chicken for 12-15 mins, or until the internal temperature reaches 75C. Allow to rest for 5 mins before shredding into bite-sized pieces, using two forks.
  3. Bake the sweet potato fries according to the manufacturer’s instructions until crisp and golden. While still hot, scatter over the grated cheddar cheese and allow it to melt slightly.
  4. Transfer the cheesy fries to a serving platter and top with the shredded masala chicken. Scatter over the sliced red onion, diced cucumber, shredded lettuce and pomegranate seeds.
  5. Finish with generous drizzles of sweet yogurt and MAGGI® Hot & Sweet Sauce before garnishing with sliced green chilli and fresh coriander. Serve immediately.
