Max out your miso - Bar & Kitchen

Max out your miso

Use up every gram of this umami-packed ingredient with our tips.

Pimp sauces and spreads

Salads, sandwiches and sauces can all be elevated by a touch of miso. Make it into a vinaigrette to toss through leaves or a dressing to mix into grain bowls. Stir into mayo or cream cheese as a base for butties or burgers. Blend into yogurt or houmous to make a dip. Add a spoonful into soups or stews to pack in extra flavour.

Use it as seasoning

Yellow, white or red miso all offer strong savoury flavour, making them a great alternative to salt. Mix a small amount into butter to create a compound that can be used to add extra punch to a range of dishes. Use it to top corn on the cob, steak or baked potatoes. Mix it through root vegetables or greens before roasting or after steaming.

Make marinades

Never have plain proteins again with miso-based marinades. Mix the fermented paste with sweeteners like honey or brown sugar to get a balance. Add in a touch of chilli, soy sauce, ginger or lime zest for extra spice, freshness and zing. Then let your chicken, fish, pork or tofu marinate in the
sauce for between half an hour and overnight.

Bakes full of taste

For that irresistible salty-sweet combo, use a touch of miso in your bakes. Chocolate or caramel-based desserts can all have their flavour enhanced by adding a teaspoonful of the paste. Add it into the butter and sugar mix of brownies, cakes or cookies to enhance their overall sweetness and keep diners coming back for more.
