Festive yule log with cream filling, ganache and KITKAT crunch – yum!

Ingredients
• 200g eggs (4)
• 100g caster sugar
• 65g self-raising flour
• 40g cocoa powder
• icing sugar, for dusting
• 150ml whipping cream (for filling)
• 150g ricotta
• 250ml whipping cream (for ganache)
• 150g chocolate, chopped
• 30g KITKAT® Chocolate & Wafer Pieces Mix-ins
Method
  1. Whisk the eggs and caster sugar until at ribbon stage.
  2. Sift the self-raising flour and cocoa powder into the bowl and gently fold to combine.
  3. Pour into a lined shallow baking tin, spread evenly and bake at 200C for 8-10 mins until cooked through.
  4. Remove from the oven and trim the edges by about 1cm all around.
  5. Invert onto parchment dusted with icing sugar, roll up with the parchment and cool completely.
  6. Whip the 150ml whipping cream and ricotta to soft peaks.
  7. Unroll the sponge, spread the cream filling and re-roll tightly.
  8. Warm the 250ml whipping cream, pour over the 150g chocolate and mix to a smooth ganache.
  9. Pour the ganache over the roll and sprinkle with the 30g KITKAT® Chocolate & Wafer Pieces Mix-ins.
  10. Chill before serving.
