Honey and Thyme Roast Parsnips

Ingredients
750g parsnips peeled, cored and chopped
4 tbsp beef dripping (or vegetable oil if preferred)
2 tbsp fresh chopped thyme
3 tbsp honey
Method
  1. Place a tray with the beef dripping in a preheated oven at 190C for a few mins or until hot.
  2. Remove the tray from the oven, place the parsnips in the fat, and give them a good stir to coat. Season with salt and pepper and sprinkle over the thyme.
  3. Return to the oven and cook for 25 mins. Remove from the oven, pour over the honey and stir to coat well. Return to the oven and cook for 5 mins longer or until golden.
