Honey and Thyme Roast Parsnips

Ingredients
750g parsnips peeled, cored and chopped
4 tbsp beef dripping (or vegetable oil if preferred)
2 tbsp fresh chopped thyme
3 tbsp honey
Method
- Place a tray with the beef dripping in a preheated oven at 190C for a few mins or until hot.
- Remove the tray from the oven, place the parsnips in the fat, and give them a good stir to coat. Season with salt and pepper and sprinkle over the thyme.
- Return to the oven and cook for 25 mins. Remove from the oven, pour over the honey and stir to coat well. Return to the oven and cook for 5 mins longer or until golden.
