For a perfectly fluffy pancake that is easy to make and melt in the mouth delicious!

Ingredients
160g plain flour
1 tbsp baking powder
2 tbsp sugar
1 tsp salt
1 large egg
4 tbsp melted butter
1 cup buttermilk OR 240ml milk plus 1 tbsp Lazy Lemon Juice stirred in
2 tsp vanilla extract
Optional toppings: blueberries, chocolate chips, thinly sliced apple, cinnamon sugar, maple syrup, Lazy Lemon Juice
Method
- Sift the flour, sugar, baking powder and salt into a large bowl. Whisk the ingredients together and set aside. In a small bowl melt the butter and set aside.
- In a separate bowl add the buttermilk or substitute, egg and vanilla then whisk together.
- Pour the melted butter into the milk mixture and stir together.
- Pour the wet mixture into the dry ingredients. Begin heating your pan on medium high with a pat of butter for lubrication.
- Whisk together until just combined. Don’t worry about any little lumps you see.
- Use a measuring cup to scoop about a third of a cup of the pancake batter and add it to your heated, buttered pan. Cook until golden brown, flip then and cook until golden.
- You can add berries, chocolate chips or thinly sliced apple to your batter at the final stage to add some extra oomph to your pancakes.
- Serve with cinnamon sugar or maple syrup, Lazy Lemon Juice and some butter!
