Chicken, Kale and Salsify soup

With these different textures, this creates a hearty soup, suitable for a light lunch or evening starter.

Ingredients
200g salsify
2.5l water
100g kale
Knorr Professional Classic Cream of Chicken Soup 25 Portions
100ml double cream
50g butter
150g grilled chicken breast
10g chives
Method
  1. Peel and cut the salsify in to 1inch pieces.
  2. Cook in boiling water until soft.
  3. In the same water add the kale and blanch for 1 min then remove and set aside.
  4. Bring the water back to the boil and whisk in the KNORR Classic Cream of Chicken soup then reduce the heat and simmer for 2 mins.
  5. Add the kale and cream to the soup then remove from the heat.
  6. Melt the butter in a sauté pan then add the salsify and cook until golden brown.
  7. Pour the soup into serving bowls then garnish with the salsify, chopped chives, shredded chicken and crispy kale.
