Ingredients
500g frozen berries
50g unrefined granulated sugar
1 lemon (juice and zest)
30g sponge fingers
100ml sherry
400ml Ambrosia custard
400ml fresh double cream
Grated dark chocolate
Method
- Place the berries, sugar and lemon (juice & zest), into a pan.
- Bring to a simmer then remove from the stove and allow to cool.
- In 10 suitable glasses, place pieces of broken sponge fingers.
- Drizzle over the sherry. Spoon over the berry mixture.
- Whisk together the custard and cream until it forms soft peaks.
- Pipe the cream onto the berry mixture, sprinkle over the grated chocolate and serve.
