The Italian sauce is destined for much more than pasta. Try these ways to brighten your menu.
Chicken puttanesca is tasty with pasta or bread. Fry off chicken breasts then add chillies and cook until softened. Add the sauce, stock, olives, capers, fresh oregano and chopped anchovy fillets in oil. Simmer until thickened and garnish with basil.
Poach firm white fish in tomato sauce for a Spanish-style dish. Add olives and capers to the sauce with the fish, then cover and cook on medium to low until the fish is cooked.
