These Wild Garlic Aioli Fries combine crispy fries with a creamy wild garlic aioli, crispy capers and fresh parsley for a simple yet flavour-packed side dish. Perfect for pubs, restaurants and sharing menus, this loaded fries recipe delivers a savoury, herbaceous twist that’s easy to recreate.

Ingredients
• 200g Ultra Crunchy 10mm Fries
• 4 tbsp mayonnaise
• 1 tbsp wild garlic, finely chopped (or roasted garlic purée)
• Juice of ½ lemon
• 2 tbsp capers, pan-fried until crispy
• Fresh flat-leaf parsley, to finish
Method
  1. Mix mayonnaise, wild garlic and lemon juice. Season and refrigerate.
  2. Fry capers in a little oil until golden and crisp. Drain on kitchen paper.
  3. Cook fries per pack instructions.
  4. Serve fries with aioli alongside, scattered with crispy capers and parsley.
