Pad Krapao Beef with Peanuts

Quick Thai basil beef stir-fry with peanuts and jasmine rice

Ingredients
• 100ml Kikkoman Naturally Brewed Tamari Gluten free Soy Sauce
• 300ml oyster sauce
• 100ml fish sauce
• 100ml lime juice
• 150g palm sugar, chopped
• 800ml beef stock (gluten-free)
• 30g corn starch
• 400g shallots
• 30g garlic
• 100ml peanut oil
• 600g red pepper
• 2kg ground beef
• 4 tsp fresh coriander, chopped
• 4 tsp fresh chives, chopped
• 1 bunch Thai basil, chopped
• 50g salted peanuts, chopped
• 1.2kg cooked jasmine rice
Method
  1. To make sauce: Mix Kikkoman Naturally Brewed Tamari Gluten free Soy Sauce, oyster sauce, fish sauce, lime juice, palm sugar, beef stock and corn starch, then set aside.
  2. Chop shallots and garlic and brown in peanut oil. Cut red pepper into strips, add to pan and fry for 2 mins. Add ground beef and stir-fry until crispy, then add the sauce and cook for 3 mins until thickened.
  3. Sprinkle fresh coriander, fresh chives, Thai basil and salted peanuts over the meat and serve with cooked jasmine rice.
