Lemon and Mango Bombes

Simple, yet elegant dessert that you can keep in the freezer ready for service

Ingredients
500ml semi skimmed milk
100g Carte D’Or Lemon Mousse Mix
95g Carte D’Or Mango Mousse Mix
Small biscuits, lime or lemon curd and mint leaves, to serve (optional)
Method
  1. Pour 250ml milk into a bowl and add the Carte D’Or Lemon Mousse Mix. Whisk with an electric mixer for 2 mins at a low speed followed by 5 mins at high speed.
  2. Pipe into half sphere moulds then level off with a palate knife. Place the tray into the freezer for 3 hours or until set.
  3. Repeat steps 1 and 2 with the Carte D’Or Mango Mousse Mix.
  4. Remove the half spheres from the moulds and press alternate flavours together. Place back in the freezer until ready to use. If desired, serve on a small biscuit and put some lime or lemon curd and a mint leaf on top.
