Layer up your menu in that ‘between lunch and dinner time’ with the traditional medley of scones, biscuits, cakes and sandwiches. Offer premium ingredients, such as clotted cream from Cornwall, source milk and cream from Jersey cows and use local jam and don’t worry whether the jam or cream goes first. Add in a charity donation for the feelgood factor.
