Beer, Cheese & Chorizo Dip

For a big sports game, get this tasty dip on your menu.

Ingredients
250g cooking chorizo, crumbled
120ml Mexican lager
200g grated cheddar
200g grated Monterey Jack cheese
1 tbsp cornflour
½ tsp cayenne pepper
2 tbsp hot sauce, plus extra to garnish
2 large tomatoes, diced
1 red onion, diced
1 jalapeño chilli, diced
1 tbsp coriander, chopped
Juice of 1 lime
Sour cream, to serve
Optional: McCoy’s Sour Cream & Onion Muchos, to serve
Method
  1. Fry the chorizo over a medium heat for 3 mins. Tip into your serving dish.
  2. In a saucepan, heat the lager until bubbling. Combine the cheeses with the cornflour, cayenne and hot sauce, then tip into the beer and whisk until you have a smooth sauce.
  3. Pour over the chorizo.
  4. Combine the tomatoes, red onion, jalapeño, coriander and lime juice in a bowl to make a salsa. Set aside.
  5. When ready to serve, grill your dish on a high heat until bubbling. Garnish with extra hot sauce, sour cream and salsa and serve with McCoy’s Muchos or other crisps/tortilla chips.
